Table Talk: Southwestern Black Bean Salad

 It's my week to host and when I chose this recipe, I wanted to pick something easy.  I haven't really been feeling like spending a ton of time in the kitchen lately.  I think it's because I'm pregnant (with someone else's baby) and nothing really sounds that great.  Then, late last week, we got some devastating news.  My little baby nephew had passed away in his sleep.  It was the most heart-breaking experience but at the same time, there was such an out-pouring of love for my brother and his family, it was lovely to see.  Our weekend was spent crying and driving and then more crying and driving and I don't know that we'll recover anytime soon.  This recipe ended up being about all a person can handle after something like that.  I knew it would be easy and once I got in the kitchen to make it, I found my kitchen to be what it always is-therapeutic.  I know some people won't understand but sometimes I think cooking keeps me sane.  Once I got in there I decided to bake some bread because fresh baked bread makes everything seem a little better.  And also because I knew Calvin wouldn't be too savvy on the dinner plans but he always likes bread. :)

Table Talk: Chickpea Cakes with Cucumber-Yogurt Sauce

Whaaat?  Who would pick that for their recipe?  Is this some kind of joke? 
Um, no.  Not a joke. 
It was my week to host.
And I was trying to choose a recipe that was new and different.  
I also noticed that we hadn't made anything from the vegetarian section of the book yet.
Have I told you that Tyler almost turned into a vegan a couple weeks ago?
Yeah, he eats humus now.
I'm not really sure how it all came about but it was about the same time he turned into a cowboy and started listening only to Country music.  Well, and Classical music sometimes.
Basically, he wanted to be a vegan cowboy.
It's weird, but that about sums up Tyler.  Weird.  But also why I love him.  
Never a dull moment and just the way I like it.
Anyway, I thought since he was a humus-eating-fool these days, it would be a good time to try and throw something like a chickpea cake on the table for dinner.  
A couple months ago, he probably would have taken one look at this and walked out.  Maybe for good, maybe just to head to McDonald's.  
We'll never know.
I chickened out during the last couple days and decided I had to at least make these into a sandwich.  
I mean, we've shown some progress in the eating healthy department lately, but just a chickpea cake might just be crossing a serious line.  Just to be careful, I threw in some buns, made from this potato bread recipe (I made one regular loaf and then 10 rolls with 2-2.5 oz of dough/roll).  
I'm pretty sure I would eat anything on that potato bread.
And then, like any other time I'm uncomfortable, I threw in some avocado and tomato.
I know what you're thinking.  Why am I being a freak when I'm the one who picked the dang recipe.  Because I'm a weirdo too.  That's why Tyler loves me. ;)

Salsa Chicken in the Crock pot (or slow cooker)

 Since our move started, I haven't really been feelin' it when it comes to cooking or menu planning. And that means that just about every night is like an episode of Chopped around here.  I rummage through the pantry and fridge to find anything that will go together and then I throw it all in a pan to make dinner.  Sometimes we end up with things we have eaten before and sometimes a whole new creation is born.  And sometimes we decide that we really need to go shopping because the creations are getting a bit out of hand.

Steak Taco Salad with Black Bean-Corn Relish

We don't eat red meat all that often these days but I knew I wanted to make this when I saw the photo and read the recipe title.  We all know I love black beans and corn (It's pretty obvious around here).  I completely expected to love this and I wasn't disappointed.  This was another cooking magazine situation where I had to buy it.  (I really need to get a hold of myself.)  The book was a 5 ingredient and 15 minute recipe special edition by Cooking Light.  Although I think the title of the book is misleading a bit, there are more than 5 ingredients in this dish, and it took me more than 15 minutes (because I made it harder on myself than I had to), I would still make this again and again.  The recipe called for light Ranch dressing, but I wanted to make the dressing and the pico de gallo.  You can use your judgment on whether those things are completely necessary for you or not. :)

Cheesy Spanish Rice and Chicken

I had a hankering for Spanish Rice the other day.  Put that together with the fact that I've felt like I've been running for my life lately but not knowing where I'm going and this is what you get.  I looked up a recipe for Spanish Rice and started planning my meal.  The thought of cleaning more than one pan seemed like just too much for the day and I decided to combine the meal into one pot.  Have I mentioned I hate dishes?

Mexican Lasagna


If you haven't noticed, I will eat just about anything with black beans and corn.  And most of the time, I end up loving it.  Funny for a girl who doesn't think she likes Mexican food, huh?  So when I saw this on Annie's blog last week, I knew I wanted to try it and I almost had everything to make it.  This was delicious and fairly healthy.

5 1/2 layer dip

We had a little family New Year's Eve party last night (I guess since it's past midnight, it was technically the other night.)  Me, Tyler and the kiddos.  And what does a party mean?  Food!!  We had 5 1/2 layer dip, (extra pico de gallo) with chips, some chocolate chip cookies I will share at a later date (probably tomorrow) and some virgin margaritas (strawberry and plain).  The kids got to stay up until 10:30!  We played Mario Kart, watched Tron, painted toenails and fingernails (the girls, anyway) and ate, ate, ate.  I hope you guys all had a wonderful Holiday season.  I guess it's time to get back to reality although I am not looking forward to it.  

I know this dip isn't a new notion.  You have probably made it before but I like when I can take recipes I already have and turn them into something new and delicious.
