Fajitas


I am not a huge Mexican food fan.  There are a couple things I do like and this is one of them.  But let's face it, I would eat just about anything if you put cheese, sour cream, guacamole and pico de gallo on it.  And when you go somewhere to eat and ask for guacamole, they usually give you about a teaspoon.  When you make it at home, you can have as much sour cream and guacamole as you want with out feeling criminal. :)
Fajitas
Ingredients:
1 lb flank steak or top round (about 1/4 inch thick)
2 T lime juice
1 T chili powder
1 tsp cumin
1 tsp sugar
1/4 tsp. salt
1/2 tsp pepper
2 T oil, divided
1 onion, sliced
1 red or orange pepper, cleaned and sliced
1 green pepper, cleaned and sliced
1 package uncooked tortillas or you can make them (I guess you could use the already cooked kind if you wanted.)
shredded Mexican cheese
sour cream
1 recipe pico de gallo
1 recipe guacamole

Directions:
Combine lime, chili powder, cumin, sugar, salt and pepper.  Place meat in zip seal bag and pour lime mixture over it.  Seal bag and move meat around to cover both side of meat in marinade.  Let marinade for 1-2 hours.  (I usually make pico de gallo and guacamole while waiting for meat to sit.) 
After meat has marinated, heat oil over med-high to high heat.  Once it starts to smoke add onions and cook while stirring, they should cook pretty fast, and should be browning a little bit.  After about 5 minutes, add remaining vegetables and cook for an additional 5 minutes until tender and browned slightly.  Remove vegetables from pan and add remaining tablespoon of oil.  Remove steak from marinade and cook in oil for 2-3 minutes on each side.  Transfer steak to a cutting board and let rest 5 minutes.   Heat pan or griddle and start warming tortillas.  Return vegetables to pan and slice meat into strips, return to pan and stir to coat. (If your meat isn't done as much as you would like you can cook a couple additional minutes.

Serve on tortillas with cheese, sour cream, pico de gallo and guacamole

  1. Fajita's are one of my all time favorite foods. For the longest time, if we went to a restaurant and Fajita's were on the menu I would get them. So I was glad when Amanda started working on a good Fajita recipe. These can definitely hold their own with the best that I have had. Thanks babe for making awesome Fajita's!
