Steak or Chicken Kebabs (Kabobs, whatever) with Soy-Ginger Marinade

The weather has been getting warmer here.  So warm that we started thinking about grilling.  And then, of course, the day we planned to grill, it wasn't so warm.  I mean, it was still in the high 50s but not the weather that was making us crave the grill.  Either way, these are delicious and healthy and I am going to start making them year round.  Even if I have to grill in 50 degree weather during the winter.  (I know, that is really cold!) You really could make these indoors on a grill pan though, or a broiler, or probably just a pan if you go desperate.


I think these would be great for a get-together.  With everything prepared, everyone could skewer what they wanted on their kebabs and then you don't have to.  The marinade can be made without garlic and ginger if you prefer and if you are having a party, you might want extra sauce for dipping.  In my humble opinion, it's the marinade/sauce that makes it so good.

Steak or Chicken Kebabs
Ingredients:
1 1/2 -2 lbs steak or chicken, cut into 1/2-1 inch cubes
Veggies of your choice, cut into cubes.  We used:
1/2 a red onion
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
8 oz mushrooms
1/2 lb cherry tomatoes
1/2 pineapple (don't worry we ate the other half)
1 T olive oil, optional
1 tsp minced garlic, optional
1 tsp minced ginger, optional
1/2 cup sugar
1/4 cup soy sauce (if you are gluten-free, make sure your soy sauce is too!)

Instructions:  
For the marinade, add olive oil to pan over med-high heat.  Cook garlic and ginger for 1-2 minutes.  Add sugar and soy sauce and bring to a boil.  (If you aren't using garlic and ginger just add soy sauce and sugar to pan) Boil for 1 minute and then remove from heat and cool. (Here is where I cubed my meat, while waiting for marinade to cool)  
Once cool, pour half of the mixture over meat.  Cover and let sit for 1-2 hours (only 1 for chicken).  If  using bamboo skewers, soak in water for 20 minutes.  
Preheat grill (probably med-high to high range depending on your grill).  
Place desire ingredients on each skewer and spray with canola or olive oil spray.  
Cook until done to your liking.  
The steak cooks pretty fast since it's cut small (about 5 minutes), chicken may take a little longer.  Serve with other half of soy sauce mixture for dipping.  
Serves 4-5
