Rachel's Healthy and Delicious Waffles


I used to have a waffle maker that I loved.  His name was Warry.  I planned to love him forever, but then he died.  I have been mourning him for 2 years now.  The pain has just subsided enough to replace him.  Well, I don't know if anything could ever really replace him, but maybe ease the pain, fill the void a little.

Here is my new friend.  I haven't named her yet, but I have had my eye on her for a while.

I have really been missing waffles.  But as you know, waffles aren't always the healthiest things and am trying to be better about all that nonsense.  Enter Rachel and her waffles.  I think you will be surprised how many great things she has packed into these waffles and how filling they are with few calories.  You should also just check out her blog to see how awesome it is.  I had to adapt her recipe because I didn't have wheat germ and I reduced the oil to help the calorie content situation.  My kids loved these and so did I.

Hadlee had buttermilk syrup.  Have you tried it yet?  I don't think I have bought syrup for 2 years, we are completely converted.  There are also two versions of caramel buttermilk syrup.

Calvin had a mix of syrup and strawberries, but I didn't get a photo.

Okay, so I halved the recipe and used about 3/4 cup batter for each waffle.  It made 6 waffles (giant waffles, I couldn't eat a whole one).  I used 2 T of canola oil for half the recipe and just left out the wheat germ.  And here is the calorie info if you are interested.  If you have a smaller waffle iron and only use 1/2 cup of batter, there are only 193 calories per waffle!

  2. I love waffles too but I don't have a machine at home but it's actually good, otherwise I would be making them ALL THE TIME!
