Pico de Gallo


I didn't know it was spelled like that, I just educated myself the other day when I emailed this recipe to a friend.  Now I wonder if I am saying it right.....
If you had a garden and you have tonz of tomatoes lying around then I am so jealous of you. 
I wish I did, I love tomatoes. 
This is an easy recipe for fresh salsa.  I have some recipes I want to post later that this goes really well with but we also just eat it sometimes with chips. 
I really wish someone could send some garden tomatoes to me!

Pico de Gallo
Ingredients:
1/3 of a med onion (If it's a really strong onion, you might want to scale this back a bit)
2 tomatoes
1/4 cup cilantro
1 T lime juice
1/2-1 (depending on how it tastes) tsp. sugar
1/2 tsp salt
1/4 tsp pepper
you could also add a jalapeno if you like that kind of thing.

Directions:
The only thing that could make this recipe any easier would be a food processor.  If you don't have one, just chop everything up and mix.  Taste to check for more salt/pepper/lime/sugar.

If you have a food processor, it's super easy.  Add onion, cut into quarters and cilantro (you would add the jalapeno now too if you are using it) to the bowl with steel blade. Turn on a few seconds until roughly chopped.
Cut tomatoes into quarters and add to bowl with remaining ingredients.  Pulse 4 or 5 times until desired consistency.

Taste and check to see if more lime/salt/sugar/pepper is needed.  I think it tastes better after it has been refrigerated for a couple hours, but sometimes we can't wait that long.  This makes about 2 cups.

  2. This stuff is amazing. Amanda used to make canned salsa from a family recipe when we first were married. It was good and all but who wants to slave over boiling tomatoes and pressure pots all day when you can whip this up in 1 minute. I love this stuff. Again, I have been ruined for any other salsa because of this.

  3. Yumm-o! NOW, we're talking! You'll laugh at my status update in the morning... my tomatoe stash is low and my neighbor is out of red ones for a few days. I didn't plant this year... that won't happen again. Fresh tomatoes have become a staple in my weight loss journey, I don't even know how many I've eaten this summer. In the store they cost so much and there is no comparison to the flavor of one grown in your [the neighbors] yard!
