Teriyaki Chicken


This might be one of the easiest recipes I make and it might also be Tyler's favorite.  When I first started making Teriyaki Chicken, there were quite a few ingredients that went into the teriaki sauce.  I have since realized that it's so much more simple than I was making it and we like it better.  For 2 1/2 years my son was on a gluten free diet and it's hard to find gluten free teriyaki sauce (sometimes it's also hard to find gluten free soy sauce).  This was a recipe we could all eat and we all like it.


Teriyaki Chicken
Ingredients:
7 chicken tenders, thawed and cut into chunks
1 T oil
3 cups frozen broccoli or stir fry veggies
1/2 cup sugar
1/4 cup soy sauce
 cooked white rice (or brown)

Directions:
I usually start the rice in my rice cooker.  For this recipe 2 cups of cooked rice is enough for our family of 4.  In a saucepan combine sugar and soy sauce.  Heat over medium heat until it starts to boil.  Boil for 1 minute and remove from heat.  In skillet, heat oil, add chicken cook for about 2 minutes then add vegetables, cook and stir until chicken is done and vegetables are heated through.  Add 1/3 cup sauce to pan and coat.  Serve over rice with extra sauce if desired.  Serves 4.

This sauce is also delicious as a steak marinade and sauce.

  1. This is probably in the top 5 of my favorite Amanda dinners. I love this stuff, and usually eat way to much of it because I have no self control when it comes to my favorite meals.
