In case you are looking for Cinco de Mayo ideas, I've put together a few recommendations.
If you haven't tried these Churros yet, you NEED to. You will be surprised how easy they are and completely expecting how delicious they are.
These fish tacos were so good. I have just been reminded that I need to make them again. If you want to get really serious, you can also make the corn tortillas to go with them.
I had my first experience with Tres Leches Cake and it was amazing. I would recommend it to anyone. If you don't feel like making the cake from scratch, my friend Jessica posted a recipe recently with a cake mix instead.
I also need to make these again soon. These Cafe Rio Pork Burritos would be perfect for any celebration! And you can also make the Flour Tortillas.
If you are in the mood for something lighter, this Southwest Fiesta Salad is almost too delicious to be called healthy. almost.
Or you could go rouge and make these California Rolls. ;)

ReplyDeleteI'm so glad you devoted an entire post to cinco de mayo! We went all out this year and made it a 3 day cinco de mayo weekend! I found a good recipe for slow cooker carnitas! That paired with homemade tortillas is perfect. We love churros around here too. Mine don't turn out looking that nice though! I've also found a place on the island that carries Sangria and Jarritos!
