Mashed Potatoes

I love mashed potatoes.  If you ask Hadlee, I love everything and I always say everything is delicious (Hence, the blog name!).  But that's not really true, I just usually don't make things I don't like.  Every now and then, it's kind of nice to be the adult.  And as the adult, I pair mashed potatoes with everything I possibly can.  Luckily, my family likes them as much as I do. :)  I really don't peel potatoes because I spent a childhood being a potato slave, but feel free.  Sometimes I use regular russet potatoes but red are my favorite.


Mashed Potatoes
Ingredients:
6 medium red potatoes (or 5-6 small/med russet potatoes), cut up
1 tsp salt
1/2 tsp. pepper
1/4 cup sour cream (you can use light)
4 oz cream cheese (you can use 1/3 less fat)
3 T butter
1-2 T milk (optional)

Directions:  Cook potatoes in water until tender.  Add rest of ingredients to mixing bowl, when potatoes are finished, use a slotted spoon to transfer potatoes to mixing bowl covering the rest of ingredients.  Cover bowl and let sit about 5 minutes to let cream cheese and butter soften.  Mix well,  add milk to thin out potatoes if necessary. 
Serve, makes about 5 servings.

  1. These potatoes should be illegal! This stuff is like candy to me. And if you know me at all you know that candy is pretty special to me. This stuff doesn't need anything else with it to be a perfect meal. Forget about gravy too. For me gravy on this stuff is like putting Ketchup on a T Bone steak. Forget about it! To all of those who are on this blog-don't waist you time with any recipe you have for mashed potatoes. Even if it was your dead grandma's family recipe. Let go of the past and welcome to the way potatoes were meant to be mashed.
